Recipe for Steamed Scholle

 


 

Ingredients:

1 package of Scholle (or sole or flounder) fillets 1 bunch soup vegetables
Lemon juice 1 bunch parsley (optional)
Salt and white pepper 30 g butter
1 onion 1/8 liter dry white wine
1 clove garlic 3 tomatoes

 


 

Preparation:

  1. Sprinkle fish with lemon juice, salt, and pepper; cover and place in refrigerator
  2. Chop onion, garlic, and soup vegetables
  3. Heat butter in a wide pot. Steam (braise) the vegetables (including onion and garlic) in the butter and then add the white wine to quench. Add salt and pepper, cover, and allow to cook for about 10 minutes.
  4. Place the fish fillets loosely atop the vegetables, cover and allow to steam for about 5-10 minutes.
  5. Peel the tomatoes; cut tomato "meat" into cubes.
  6. Lift the fish out of the "stew" and keep warm. Place the tomato cubes into the fish stew, stir in, and allow to cook.
  7. Place the fish atop the stew and serve. Best eaten with potatoes.
